Description

Tender slices of red potatoes layered with a creamy, cheesy sauce and baked to golden perfection. This comforting side dish pairs beautifully with holiday meals, Sunday dinners, or any time you want a little extra indulgence on your plate.

Ingredients

  • 2 ½ lbs red potatoes, thinly sliced (skin on for rustic texture)

  • 3 tbsp unsalted butter

  • 3 tbsp all-purpose flour

  • 2 cups whole milk (warm)

  • 1 cup heavy cream

  • 2 cups shredded cheddar cheese (divided)

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • Salt & pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the Potatoes

    • Wash and thinly slice red potatoes (about ⅛-inch thick).

    • Preheat oven to 375°F and grease a 9x13-inch baking dish.

  2. Make the Cheese Sauce

    • In a saucepan, melt butter over medium heat.

    • Whisk in flour and cook for 1 minute to form a roux.

    • Slowly whisk in warm milk and cream until smooth.

    • Add garlic powder, onion powder, paprika, salt, and pepper.

    • Stir in 1 ½ cups cheddar, mozzarella, and Parmesan until melted.

  3. Assemble the Dish

    • Layer half of the sliced potatoes in the baking dish.

    • Pour half of the cheese sauce over the potatoes.

    • Repeat with remaining potatoes and sauce.

    • Sprinkle remaining cheddar cheese on top.

  4. Bake

    • Cover with foil and bake for 40 minutes.

    • Remove foil and bake an additional 20 minutes, until golden and bubbly.

  5. Serve

    • Garnish with fresh parsley.

    • Serve hot as a side to your favorite main dish.
