Description
Sweet, tangy, and bursting with fresh blueberry flavor, this homemade syrup is perfect for pancakes, waffles, ice cream, or even drizzling over cheesecake. Quick and easy to make, it adds a fresh-from-scratch touch to any breakfast or dessert.
Ingredients
2 cups fresh or frozen blueberries
½ cup granulated sugar (adjust to taste)
½ cup water
1 tbsp lemon juice
1 tsp cornstarch + 1 tbsp water (optional, for thickening)
Instructions
Cook the Blueberries
In a medium saucepan, combine blueberries, sugar, water, and lemon juice.
Bring to a boil over medium heat, stirring occasionally.
Simmer
Reduce heat and simmer for 10 minutes, lightly mashing some of the blueberries as they cook to release juices.
Thicken (Optional)
If a thicker syrup is desired, stir together cornstarch and water in a small bowl.
Add slurry to the pot and simmer 2–3 more minutes until syrup thickens.
Strain (Optional)
For a smooth syrup, strain through a fine mesh sieve to remove skins. For a rustic, chunky syrup, leave as is.
Serve & Store
Serve warm over pancakes, waffles, or desserts.
Store cooled syrup in a sealed jar in the refrigerator for up to 1 week.
