Description
A hearty, comforting soup made with Italian sausage, tender potatoes, fresh kale, and a creamy broth. This homemade version of the classic restaurant favorite is rich, flavorful, and perfect for cozy nights at home.
Ingredients
1 lb Italian sausage (mild or spicy)
4 slices thick-cut bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
4 cups russet potatoes, thinly sliced or diced (about 3 medium)
6 cups chicken broth (low sodium)
1 tsp crushed red pepper flakes (optional, for heat)
Salt & black pepper to taste
1 bunch kale, stems removed & leaves chopped
1 cup heavy cream
Parmesan cheese, grated (for garnish)
Instructions
Cook the Meats
In a large pot or Dutch oven, cook bacon until crispy. Remove and set aside.
In the same pot, cook sausage until browned, breaking it apart with a spoon. Remove and set aside with bacon.
Sauté Aromatics
Add onion to the pot and cook until softened, about 5 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Simmer the Potatoes
Add sliced potatoes, chicken broth, and red pepper flakes.
Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
Add the Greens & Cream
Stir in sausage, bacon, and chopped kale. Simmer for 5 minutes until kale is wilted.
Stir in heavy cream and adjust seasoning with salt and pepper.
Serve
Ladle into bowls and garnish with grated Parmesan.
Serve hot with crusty bread for dipping.
